When replying to or forwarding an email where an email signature already exists, the signature layout changes and loses all formatting.
This issue occurs when replying/forwarding from an Android device using the Outlook Mail app and usually when clicking the "Load full message" button. It occurs because the application does not support HTML tables within emails.
Unfortunately, as the issue is with the Outlook Mail app on Android devices, we do not have any way to correct this issue within our software.
As the issue occurs within a third party and is outside of our control, we would recommend you raise a feature request for full table support within the Outlook Mail app on Android devices with Microsoft.
